Valencia, the third largest city in Spain is famous for its gastronomic adventure. Valencia is also the undisputed home of that quintessentially Spanish dish: Paella. The key to a great paella lies in the rice. Spaniards use Bomba rice in their paella. These short-grain rice varieties grown in Valencia's L’Albufera nature preserve are known for their ability to absorb three times the liquid of other rice varieties. The more broth absorbed means more flavorful rice, which is why a well-made paella is so delicious.
